Principal Function:
We are seeking a dedicated Food Service Dietitian for The University of Oklahoma
The Food Service Dietitian will collaborate with the Performance Executive Chef, General Manager, and the University of Oklahoma Sports Nutrition Team. This is a 40-hour/week, hourly position with potential benefits. The hourly pay rate will be based on experience and credential status. Holidays, weekends, and unconventional hours are possible.
Assistant Director of Performance Dining Operations
- Oversee quality control of the training table, ensuring accurate menu execution, product and food quality, proper food and allergen labeling, athlete allergy accommodations, and compliance with mutually agreed-upon standards
- Provide Levy staff in-services on student-athlete allergies, food safety, and quality service
- Menu writing assistance and oversight
- Assist with front of house activities, training, and services
- Consult with Levy Executive Chef on tastings, preparations and presentations
- Work with OU sports nutrition staff to streamline food service operations
- Create and oversee training table education in conjunction with OU Sports Nutrition
- Work with OU Dietitians to coordinate meals with outside catering vendors
- Oversee and be present at training table meals to serve as meal-time dietitian and resource
- Participate in weekly meetings with Levy and OU sports nutrition staff
- Serve as liaison between OU Sports Nutrition and Levy training table management
- Oversee all Training Table nutrition software and technologies (i.e. TeamWorks, Redcard) to include: menu integration, check-in troubleshooting, meal scheduling, allergens, etc.
- Other job responsibilities may involve the development/execution of nutrition education events (cooking demos, theme meals, etc.) and assistance with inventory/ordering for training table selections and/or fueling stations under the direction of OU Dietitians
- Assist dietitians with nutrition operations including but not limited to: acquiring and setting up of local vendors, fueling station logistics and game day/practice operations
- Perform related duties based on direction from the OU Sports Nutrition Department and Levy Training Table management
Preferred Qualifications:
- Registered Dietitian (RD/RDN) credential – strongly preferred
- Licensure in the State of Oklahoma (or eligibility to obtain within 60 days of hire)
- Minimum 1-year experience in a food service role as a RD/RDN
- 1-2 years of supervisory experience
- Strong interest in food service, inventory management and menu design
- Experience working in an athletics nutrition setting/environment
- Exceptional communication, interpersonal, organizational, and time-management skills.
- Proficiency in Microsoft Office Suite and nutrition tracking software.
- Knowledge of rules and regulations of the NCAA and SEC Conference preferred
